Raisins – a dried grapes. It is produced by drying the grapes in special kilns or in the sun, then it takes the form of brown, gold or black “stones”. The highest culinary demands raisins is on the Mediterranean and the Near and Middle East.

Types of raisins
There are four types:
- Bright small, usually seedless – raisins, or Sabza. It is made from sweet white or green grapes. It is used during the manufacture of confectionery, cooking pilaf and compotes;
